Yeah, so if you saw the recipe I posted for cake batter bark, you noticed that it used a miniscule amount of cake mix. What are you going to do with the rest of that mix?? I was planning to make a cobbler or something with it, but my daughter was hollering because our cookie jar was empty and she “needed” some! And lo and behold, the same blog that I got the cake batter bark recipe from posted a recipe for cake batter cookies, using the remaining cake mix. I have to say, these are pretty outstanding. I didn’t have high hopes because it just seemed weird. And the dough was an odd consistency. But they were buttery tasting and just oh so good….I think we have one left!
Cake Batter Cookies
Recipe from Stephanie Cooks
1 box (or remains of your box) of cake mix
1 tsp baking powder
1/2 cup vegetable oil (I used canola)
1/2 cup semi-sweet chocolate chips
1/2 cup white chocolate chips
Preheat oven to 350.
Mix your dry ingredients together (cake mix and baking powder). Add eggs and oil and once smooth, add the chocolate chips and stir in. The batter is kind of loose. Drop teaspoonfuls onto a baking sheet and bake about 10 minutes or until the edges are set. Let cool on the pan for about ten minutes then remove to a cooling rack.
