Yesterday, there was a problem at our house.
Yes, that’s our cookie jar. And it was empty. And my 2-year-old daughter was not happy about this development! I had all of the ingredients on hand to make our regular oatmeal chocolate chip cookies, but I was procrastinating. And I’m glad I did, because during my procrastination (ahem, internet surfing) I spotted a recipe someone posted on their blog for peanut butter oatmeal chocolate chip cookies. Well hell, I love peanut butter so that always makes things better, right? And I had a brand new jar sitting just waiting to fulfill its destiny! And I had a ready and willing helper!
So you see, the stars were lining up, these cookies were meant to be! And that is fitting because these cookies were out of this world! I’d have to go out on a limb and say that they were the BEST I’ve ever made. So there ya have it, you gotta do it now, line up those stars and make some cookies!
1 cup flour
1 cup oats
1/2 tsp baking soda
1/2 tsp baking powder
1/4 tsp salt
1/2 cup butter (1 stick), softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1/2 cup peanut butter
1.5 tsp vanilla
1 cup semi-sweet chocolate chips
Preheat oven to 375.
In a medium-sized bowl, whisk together the flour, oats, baking soda, baking powder and salt. In a large bowl (stand mixer), cream together the butter, sugars and the peanut butter. Add in the egg and vanilla, blend together well. Slowly add in 1/3 of the flour mixture, mix till well blended and then add in another third. Toss the chocolate chips with the remaining one-third until they are well coated, then blend in to the dough mixture.
Make small balls (use your fingers, it’s fine) and place on a baking sheet (I used a silicone mat on mine). Bake 10-12 minutes or until turning golden on top. Makes roughly 3 dozen cookies.
