Ok really, who doesn’t love a good stuffed mushroom? They are so versatile, you can literally stuff them with anything you like! My hubby bought some loose bulk mushrooms the other day and wanted them to go with some steaks he was throwing on the grill, so we decided to stuff them using some random ingredients we happened to have lying around. And it was decadent. And there were no leftovers 😦
Bacon and Bleu Stuffed Mushrooms
Mushrooms, washed and stems removed and chopped (the stems, not the caps)
Panko bread crumbs
bleu cheese crumbles
2 slices bacon, cooked and crumbled
1-2 tbsp butter, melted
preferred seasoning to taste (I used Tony’s, of course)
Preheat oven to 350.
Mix the chopped mushroom stems, breadcrumbs, bleu cheese, bacon and butter together and season to taste. Stuff into mushroom caps until they are full and slightly rounded on top. Bake until turned golden on top.
Note: Any leftover stuffing would be delish in a chicken breast. Just sayin’!
