Last night I invited a good friend over for a last minute dinner. I wanted something sweet to serve for dessert, but didn’t want to go to the supermarket so I set forth looking for the perfect recipe that used things I had on hand. Perfection was found in these peanut butter chocolate chip bars. Not only were these super simple to make, they were heavenly!! They tasted JUST like a peanut butter cup. So delicious! The picture I took wasn’t the greatest (they’re not very photogenic and I think mine were actually undercooked – but they were still great!) but don’t be fooled…you will be thanked by all if you make this soon!
Peanut Butter Chocolate Chip Bars

6 tbsp butter
1/2 cup peanut butter
1 cup granulated sugar
1/4 cup light brown sugar
1 tsp vanilla
1 cup all-purpose flour
1/4 tsp coarse salt
1 tsp baking powder
1 cup semi-sweet chocolate chips
Preheat oven to 350 and grease an 8×8 baking dish.
In a small bowl, whisk together the flour, salt and baking powder. Set aside.
Cream butter and peanut butter together until smooth. Beat in the sugars then add the eggs, 1 at a time, scraping the bowl between each egg. Stir in the vanilla and then the flour mixture. Add the chocolate chips and gently fold in. Spread in dish and bake 30-32 minutes. Allow to cool completely before cutting.
