I love a good soup, and my husband loves black beans, so this sounded like a perfect dinner for us. I’m not the biggest fan of black beans, but I’m trying to learn to like them. This soup was really good, it sort of tasted like bean dip. I loved how simple it was and that it didn’t call for a ton of stuff. We topped ours with shredded cheese, sour cream and avocado slices. Yum yum!!
Black Bean and Salsa Soup

2 cans black beans, rinsed and drained
1 cup salsa (we like chunky medium flavor)
1 can vegetable broth
1 tsp cumin
toppings of your choice
Combine the beans, salsa and cumin in the food processor. Pulse until smooth. Pour into a pot and add the vegetable broth. Cook until heated through. Garnish with desired toppings.
