Black Bean & Avocado Brownies

Yep.  You read it right.  Want to hear the crazy part??  It tastes GOOD!  The trick to these brownies is to make sure you allow them to be completely cool.  Heck, go ahead and wait till the next day to eat them.  If you eat them hot, you may taste the “secret” ingredients.  If they’re cool, you just taste rich, fudgy brownies.  Seriously.  My only complaint about this recipe is that they could have been sweeter.  But at only 98 calories per brownie, it satisfies the craving.  Still…next time (and there WILL be a next time) I will add a little more sugar.  Try them.  You know you want to!

Black Bean & Avocado Brownies

Ingredients:
1 can black beans, rinsed and drained
3/4 cup egg substitute (or three eggs)
1/4 cup honey/maple syrup (I used half of each)
1/2 ripe avocado
6 tbsp cocoa powder
pinch of salt
1 tsp vanilla
6 tbsp white sugar
2 tsp instant coffee – not sure, I MIGHT omit this next time…

Method:

Preheat oven to 350.

Grease an 8×8 casserole.

Combine the beans, egg, syrup/honey and avocado in the food processor.  Blend until completely smooth.  Add the remaining ingredients and continue to blend until fully combined, scraping once or twice.  Spread batter into casserole and bake 30-33 minutes or until toothpick inserted comes out clean. 

Allow to cool completely, preferably overnight.  Cut and serve.

P.S.  They’re even better like two days later!
