One of my favorite things to eat is a grilled cheese sandwich. I used to go to my grandma’s after school and she’d make one for me on this special griddle. I have that griddle now, but I only use it for special occasions! I’m silly, I know. It’s special to me though. Anyway, like I said, I can tear up some gooey grilled cheese sandwiches. So naturally when I saw the post on Joelen’s Culinary Adventures, my mouth immediately watered! From her blog, I followed the link to more grilled cheese ideas. And then I had a plan.
My grilled cheese sandwich tonight was seriously one of the best things I’ve ever eaten. You know it takes a lot for me to say that. No, it was NOT “light and healthy” but you know what, sometimes you just gotta say SCREW IT! The parmesan on the outside cooked to a crisp golden and it provided a delicious nutty crunch with each bite. And well inside…bacon, cheese and avocado….how can you go wrong?? My friend, you can’t.
Grown-Up Grilled Cheese
Bread of your choice (I used white-wheat)
Cabot brand extra sharp white cheddar cheese, cut into slices
avocado, cut into slices
In a small bowl, mix butter with the parmesan cheese and parsley. I didn’t measure this, just continued to add and stir until it was thick but spreadable.
Spread this delicious buttery cheese mixture on the “outsides” of the bread slices. Heat a nonstick skillet to medium heat and spray some cooking spray for good measure. Place one slice of bread buttered side down, then layer on the avocado, cheese slices and sliced bacon (I used two slices of bacon for one sandwich). Cover with the other slice of bread, buttered side out. Flip when golden, cook evenly on both sides until golden and crispy and the cheese inside has melted. Serve hot (great with soup!).
