Roasted Broccoli

I love broccoli.  There are probably about ten billion recipes for different things to do with broccoli and I assure you, most of them are fantastic!  This recipe is for roasted broccoli.  Everyone has their own way of doing this, and after reading a few recipes I decided to try my own way.  I didn’t measure anything really, just kind of seasoned to taste and did things till it looked right, you’ll know what I mean when you try it.  And definitely do try it, it was FABULOUS!  My first bite I thought there was too much lemon, but there really wasn’t, it was flavorful and delicious!  You’ll definitely be going back for seconds!

Roasted Broccoli

Ingredients:
Broccoli florets (if using frozen, defrost first)
1 clove garlic, chopped
olive oil
salt, pepper & cajun seasoning
2 pats of butter
1 tsp lemon zest
juice of 1/2 lemon
parmesan cheese (fresh grated would be great, but I only had a canister!)

Method:

Preheat oven to 450.

Place broccoli in a medium sized mixing bowl.  Add just enough olive oil to coat.  Season with salt, pepper and cajun seasonings.  Mix in the lemon zest and chopped garlic. 

Spray an oven-safe pot or skillet with nonstick cooking spray.  Pour in the broccoli mixture, making one even layer across the bottom of the pan.  Bake 20-30 minutes, depending on how browned and tender you want it.  I baked for about 25 minutes.

Remove from oven and squeeze the lemon juice in.  Mix well and pour into a serving dish.  Sprinkle parmesan cheese generously over and serve immediately.
