Hot Pepper Dip aka Really Good Dip

I really don’t know what to call this dip.  My good buddy Kenleigh sent the recipe to me, saying that though it sounded strange I should try it because it’s really good.  Maybe we should call it “really good dip” because it was!  I happened to have one jar left of the hot pepper jelly I made a while back, so it was the perfect thing to make for a New Years Eve celebration with a few friends!  When the night was over, the dip was GONE!  I definitely recommend trying it SOON!

Hot Pepper Dip aka Really Good Dip

Ingredients:

1 cup shredded sharp cheddar cheese
1 cup chopped pecans
1 cup chopped green onions
1 cup mayo
1/2 jar hot pepper jelly (I refrigerated mine so it’d be cold like the dip!)

Method:

In a medium-sized bowl, mix the pecans, cheese, green onions and mayo together until well mixed.  Place in a mold (or make a ball like I did) and refrigerate overnight.  When time to serve, place on a dish and spread hot pepper jelly over it.  Serve with Wheat Thins.

Yum, Yum!
