White Wine Cake

I heard about this cake on an entertaining message board (that is, a message board about entertaining).  It sounded interesting and my in-laws really like wine, so I thought I’d make it for the holidays.  Sorry I can’t quote who the recipe was from, as it was a random post that I jotted down.  Whoever it was though, kudos to you because this cake was both simple and DELICIOUS!  It was so moist!  People will thank you for making this!

White Wine Cake

1 Box Duncan Hines Deluxe yellow cake mix
1 small box vanilla instant pudding
3/4 cup water
3/4 cup vegetable oil
1/4 cup white wine
4 eggs
1/4 cup brown sugar
1/4 cup white sugar
2 tsp cinnamon
1/2 – 1 cup chopped pecans

1 stick butter
1 cup of white sugar
1/4 cup water
1/4 cup white wine

Preheat oven to 325.

Mix all cake ingredients together.  Grease bundt pan and sprinkle the pecans evenly over the bottom.  Pour the batter over the nuts, evenly spreading around the pan.  Bake 1 hour, or until toothpick inserted in the cake comes out clean.  Cool on a baking rack, in the bundt pan.

For the glaze, bring the butter, sugar and water to a boil in a small pan.  Remove from the heat and add the wine.  Mix well.  Spoon 2/3 of the glaze over the cooled cake, still in the pan.  Let stand for ten minutes, then invert onto a cake plate and drizzle the rest of the glaze over the cake.
