Chocolate Chip Banana Waffles

Everyone is always saying that my daughter is the spitting image of her Daddy.  She is too.  She also seems to share his tastes, as she has a major sweet tooth.  I decided since it’s the weekend, I’d give her a sweet treat for her dinner and made her a breakfast dinner – always a good thing on a cold night!   She loves waffles, they are one of her favorite things.  And the great thing is that they freeze beautifully!  In order to make this a real treat for her, I jazzed them up with mashed banana and chocolate chips!

Chocolate Chip Banana Waffles

Ingredients:

1.5 cups milk
2 eggs
2 cups baking mix, I used Pioneer brand
splash of vanilla (probably about 1/2 tsp)
1/4 cup chocolate chips
1 ripe banana, mashed

Method:

Warm the waffle iron and spray with nonstick spray.  Always a good idea to place on top of a paper towel to catch the extra that leaks out! 

Mix the milk, eggs, vanilla and baking mix until smooth.  Add the chocolate chips and mashed banana and mix well.  Ladle small amounts into the waffle iron and close.  Cook for 2-3 minutes or until golden.
