Mushroom Rice

A few years ago back when I used to WORK for a living, I worked in a chemical plant in the engineering department.  Every year our department would have a holiday lunch for both Thanksgiving and Christmas.  Man, the food was always amazing.  What do you expect with a bunch of people from South Louisiana cooking??  I always collected recipes of the stuff I really liked and one of those was something my friend Rusty made.  Mushroom Rice.  For something so simple, it’s so tasty!  It goes great with a variety of things, we like it with oriental food like chicken teriyaki, or like tonight we served it as a side to homemade egg rolls.

Rusty’s Mushroom Rice

Ingredients:

1 small can mushroom stems & pieces, with juice
1 can beef broth
1 can French Onion soup
1/2 stick margarine
1 1/4 cup rice, uncooked

Method:

Preheat oven to 375.

Melt margarine.  Spray a casserole dish with cooking spray and pour melted butter in.  Add mushrooms, beef broth and onion soup.  Mix well.  Stir in rice.  Cover with foil and bake for 1 hour, stirring after 40 minutes.

  1. I couldn’t remember where I got this recipe, so now I see it must have been Rusty. I make this a lot too, but mainly when we have shish ka bobs or things like that. My in-laws usually do wild rice or something along those lines and I’m not a fan of wild rice, so I always make this. Very good and simple!
