Sweet Potato Casserole

One of my favorite holiday side dishes has always been sweet potato casserole.  My mom usually makes it, but uses my cousin Susan’s recipe.  It never dissapoints!  Mom made it for Thanksgiving this year and my daughter LOVED it.  Only Mom makes it with a pecan crumble topping on it and my little one was not so fond of that.  She’d spit out the pecans then stomp on them!  I think she made her point clear!

We had a lot of sweet potatoes I needed to do something with, so I decided to make her a casserole, sans pecan topping!  It’s really fantastic WITH the topping though, so I’ll write the recipe normal with it.  If you’re interested in not having the topping, I skipped that part and just sprinkled some brown sugar on top.

Sweet Potato Casserole

Ingredients:

3 cups sweet potatoes
1 cup granulated sugar
2 eggs
1 tsp. vanilla
1/3 cup milk
1/2 cup butter

Topping:
1 cup brown sugar
1/3 cup flour
1/3 cup butter
1 cup chopped pecans

Method:

Preheat oven to 350.

Peel, boil and mash sweet potatoes and stir in the next five ingredients.  Pour into a baking dish. 

Mix together topping ingredients.  Spread over sweet potato mixture. 

Bake for 30 minutes.

The Verdict:  Well like I said, this is always wonderful.  My daughter apparently inherited a sweet tooth from her daddy because she loved it!  And she’s a very picky eater!
