Back to the Basics – Scrambled Egg Sandwiches

I know you’re probably wondering why I’m featuring scrambled eggs as a recipe.  Everybody can do that.  I know it.  But a couple of years ago my mom and her friend came to visit and I asked if they wanted scrambled egg sandwiches for breakfast, they had never heard of putting your scrambled eggs on your toast.  So simple, but so delicious!  It’s one of my favorite breakfasts!  So I thought I’d share in case any of you had never thought about it. 

There really is no recipe for this, but I’ll explain the basics of it.  First you scramble your eggs, however it is that you like them.  I start by whisking my eggs with some milk to make it fluffier.  Then I add my seasonings that I like, normally some Tony’s, salt, onion and garlic powders.  I also like some chopped green onions.  Then add some butter to a nonstick skillet and add the eggs and scrape them around with a spatula till they’re the level of cooked you like.  Toast some bread, spread some mayo on it and put your eggs on it.  My husband likes cheese on his also.  Eat and enjoy!
