Pumpkin Chocolate Chip Cookies

“Can you feel it?”  Growing up, my mom would always ask me that.  She would never have to elaborate on what I was supposed to be feeling.  I knew.  Fall.  Fall is in the air and I’m LOVING it!  When you think of fall, you think of pumpkins, kids in costume, crispy colorful leaves, a chill in the air that makes you want to make a mug of hot chocolate.  This weekend is supposed to bring in a cool front here in Louisiana and since we don’t really get leaves changing color here, I thought I’d embrace it in the kitchen.  I found this recipe on friend Amy’s blog and it sounded like the perfect thing for a nice cool fall weekend.  Best part was that I already had all the ingredients on hand!

Pumpkin Chocolate Chip Cookies


1 cup pure pumpkin

1 cup white sugar

1/2 cup vegetable oil

1 egg

2 cups flour (plus extra)

2 tsp. baking powder

2 tsp. cinnamon

1/2 tsp. salt

1 tsp. baking soda

1 tsp. milk

1 tbsp. vanilla

1 cup chocolate chips


Preheat oven to 350. 

Combine pumpkin, sugar, vegetable oil, and egg with a hand mixer.  In a separate bowl, stir together flour, baking powder, cinnamon and salt.  In yet another (small) bowl, dissolve the baking soda with the milk.  Stir into the flour mixture, then add the flour mixture to the pumpkin mixture.  Mix well.  Add vanilla and chocolate chips. 

Bake 10 minutes or till golden and cooked through.

The Verdict:  It’s like fall in your mouth!  That sounds strange, huh?  Well however you want to say it, fine.  But make sure you make these, they’re fantastic!  Amy used white chocolate chips and mentioned that she thought the cookies were too sweet.  I used regular milk chocolate chips and used only 1 cup instead of 2 and it was perfect.  Also, after the first batch I wanted my cookies to be more of a cookie consistency rather than a cake-like one.  So I added about 1/4 cup flour to the rest of the mixture and mixed well.  Perfect!
