Shrimp & Grits

A nice lady we know gave my hubby some pretty shrimp from Grand Isle, so he immediately said he wanted to cook shrimp & grits.  Sounded good to me, not only do I love shrimp and grits but I also LOVE any night that he wants to cook dinner!  Don’t get me wrong, I love to cook but sometimes it’s nice to be cooked for!

Shrimp & Grits

Ingredients:

1 pound shrimp, peeled and deveined

6 slices bacon, chopped

4 teaspoons fresh squeezed lemon juice

1 cup chopped scallions

1 clove chopped garlic

Tony’s Seasoning to taste

Quick 5-Minute grits

Butter (1-2 Teaspoons)

Goat Cheese (1-2 tablespoons)

Salt & Pepper

Method:

Fry bacon pieces in a nonstick skillet then set the bacon aside.  In the leftover bacon grease, cook the shrimp until pink.  Add the lemon juice, bacon pieces, scallions, garlic and season to taste.  Saute’ for 3 minutes.

Cook the grits as directed on the carton.  Add in the butter, goat cheese and salt and pepper to taste. 

Serve the shrimp and sauce spooned over the grits.  You may garnish with a dollop of goat cheese.  We had jalapeno cheese rolls from Fresh Market on the side.

The Verdict:  This is comfort food at its’ best!  At first the sauce seemed to have a very lemony-bacon grease taste, but after adding it to the grits, it was absolutely perfect!  This is a lick-your-plate-clean kind of dinner!  It’d be perfect for a cold night 🙂  An added bonus is that it comes together REALLY quickly!
