Banana Bread

Nothing says welcome home like something warm and sweet baking in the oven.  I had some bananas that were getting pretty ripe, so rather than chunk them I decided to make a banana bread to have ready right as my husband came home from work.  I didn’t feel like going to the supermarket, so this recipe from Simply Recipes blog fit my needs perfectly.  And it didn’t hurt that the creator shares a name with my baby girl – Elise.

Banana Bread

Ingredients:

2 very ripe bananas, smushed

1/3 cup butter, melted

1/2 cup white sugar

1/2 cup brown sugar (I used my cane sugar from the mill in my hometown)

1 egg, beaten

1 tsp vanilla

1 tsp baking soda

pinch of salt

1.5 cups all-purpose flour

Method:

Preheat your oven to 350 degrees.  With a wooden spoon, mix the smashed bananas with the melted butter until well mixed.  Mix in the sugar, egg and vanilla.  Sprinkle the salt and baking soda on top, then mix in.  Add the flour last, then mix in.  Pour into a buttered loaf pan and bake 1 hour, or until toothpick inserted in the center comes out clean.

The Verdict:  This was so fantastic.  The original recipe called for 3-4 bananas, but I had only two so that’s what I had to make do with.  And I’m glad because it wasn’t an overpowering banana taste, but just perfect.  This would be delicious with nuts added, but just as it is was great.  It will be great with coffee for breakfast!
