Beer Dip

Yeah, you read that right.  Not beer AND dip, but beer dip!  Those two words conjure up ideas of simple decadence.  And that idea does not let you down.  This dip is heavenly, perfect for that simple yet tasty treat for the big game.  I found the recipe a little while back on Vintage Victual’s blog and I knew it would be something that would go over really well with our friends and family.  I made it for tonight’s LSU football game (GEAUX TIGERS!!!) but couldn’t resist a quick morning taste to see how it was.  

Beer Dip


2 pkgs cream cheese, softened

2 jars Old English sharp cheese

1 pkg dry ranch dressing mix

1/2 cup of beer

1/2 cup roasted pecans

Crackers, chips or pretzels for dipping


Empty cream cheese and Old English cheese into a bowl, microwave until easily stirred.  Add the dry ranch mix, stirring well to blend evenly.  Slowly add the beer, stirring as you go.  Top with roasted pecans.  Refrigerate at least one hour, but best for a few hours to let the flavors blend together.

Serve with your favorite crackers, chips or pretzels.

The Verdict:  This is wonderful!  It’s a great, sharp cheddar taste finished off with the nutty crunch of the pecans.  You can just barely taste the hint of beer.  It’s so easy to do, you should make it for tonight’s game!  I only made half of the recipe but this recipe is for a full batch.
