Crockpot Lime Chicken Tacos

I can honestly say I don’t think I’ve ever had chicken tacos.  Strange, I know.  I normally want my tacos traditional, with beef.  But when I came across this recipe from Loves To Eat the shredded chicken just looked so good, I couldn’t resist saving it!  I’m all about things that can be cooked in the crockpot and this sounded easy.  Perfect way to start off the week!

Crockpot Lime Chicken Tacos


1 lb. boneless, skinless chicken breasts (I used the frozen variety in the bag – 3 breasts total).
juice of 2 limes
1 tablespoon chili powder
1 cup frozen corn
1 cup chunky salsa
Seasonings – I added in a few shakes of Tony’s seasoning, garlic powder, onion powder and a few dashes of hot sauce.

toppings of your choice (cheese, sour cream, etc.)


Spray crockpot with nonstick cooking spray.  Add chicken breasts (they can be frozen still, works fine).  In a small bowl, mix together lime juice and chili powder, pour over chicken.  Cover.  Cook on LOW 6 hours.  After 6 hours is up, take two forks and shred the chicken.  Add the salsa and corn and cook on LOW for 30 more minutes.  Taste for seasonings and if needed you can add some seasonings (see what I added in the ingredients).  Serve on warm tortillas with toppings you like.

The Verdict:  This was probably the easiest thing I’ve ever put in the crockpot.  You don’t even have to defrost the chicken, how easy is that?!?!  And not only is it easy, but it’s got the added bonus of being quite delicious!  I think it would taste equally yummy on nachos!  Definite recipe keeper!
