BBQ Black and White Pizza with Spinach on Top!

Now that we’ve moved to our new house, we’ve inherited the mammoth bbq pit that was a permanent fixture to our new backyard.  It was actually built by James’ grandfather, who owned the home before us.  We’ve been tossing around ideas on what to grill for our first time on it, here’s what won, a Christen original recipe!

BBQ Black and White Pizza with Spinach Salad on top


1 pizza crust

1 cup extra virgin olive oil

1/4 tsp. red pepper flakes

4 cloves garlic, minced

1/2 tsp thyme

freshly ground black pepper

1 pkg Italian blend shredded cheese

3 ounces goat cheese crumbles

juice from 1/2 lemon

1 handful fresh spinach salad

1 small onion, chopped

1 large can mushroom slices

salt and Italian seasonings to taste

2 chicken breasts

Blackened Seasoning

1 TBSP butter


On the grill:  start coals.

On the stovetop:  Over medium heat, combine 1/2 cup olive oil, garlic, thyme and red pepper flakes.  Cook, stirring often until garlic is golden.  Pour into a bowl and set aside.  In the same dish, add a little more olive oil and the slices of onion and mushroom.  Cook until they are tender, season with salt and Italian Seasonings.  Pour into a bowl and set aside.  Rub the chicken breasts with butter on each side, and season evenly with blackened seasoning.  In yet another small bowl, make a dressing by combining 1/2 cup extra virgin olive oil with 1/2 lemon juiced, salt and pepper.  Set aside.

When your coals are turning white, cook the chicken breasts until well done.   Cut into small bite sized pieces.   Baste the oil/garlic/thyme/red pepper flakes mixture evenly over the “top” side of the pizza crust.  Set oil side down on the grill and allow to cook.  Meanwhile, baste the bottom side with the same mixture.  When crust is crisp, turn over and add the onion and mushroom mixture, chicken pieces, goat cheese crumbles and Italian cheese blend.  Move away from the coals, close the lid and allow the cheese to melt.  Cut the pizza and top with spinach greens and drizzle with olive oil dressing.

The Verdict:  There is now no other way to cook a pizza, other than the grill!  It made the crust so crispy and delicious!  I was unsure of the spinach on top, but that’s how I’ve seen it in various magazines and blogs so I gave my version a try.  My husband, James, is already talking about having this again one day this week!  Huge success!
