Bolognese Sauce

One of my favorite things to eat is spaghetti with meat sauce.  I could eat it every single day and probably not get tired of it!  In my search for “lightened” up recipes, I came across this Weight Watcher’s one for Bolognese sauce and it looked great.  It really was delicious!  It tasted pretty much like regular spaghetti sauce, you couldn’t even tell it was “light.”  It also made a lot, so I get to eat on it for a few days!  Serve over 1 cup low carb, whole wheat or high fiber pasta for a 5.25 pt. meal

Ingredients:
4 oz. pancetta, chopped
1 tbsp butter
1 small onion, chopped
1/2 cup celery, minced
1/2 cup carrots, minced (I put the celery & carrots in the food processor)
1 lb lean ground beef
1/4 cup white wine
2 – 28 oz. cans crushed tomatoes
1 bay leaf
salt & pepper (I added some cajun seasonings and garlic and onion powders)
1/2 cup half and half (I used fat-free)
1/4 cup chopped fresh parsley

Method:

In a deep pan, saute’ pancetta until fat melts.  Add butter, onions, celery and carrots and cook until soft.  Add meat, season to taste and saute’ until browned.  Add wine and reduce about 3-4 minutes.  Add tomatoes and bay leaf, simmer (covered) on LOW, at least 1.5-2 hours, stirring occasionally.  Add parsley and half and half and cook 2 minutes longer.
