Since I had some strawberries left from my salads, I decided to try the strawberry bread that looked delicious! I must say, the flavor was perfect but I was disappointed in how mine looked. My strawberries were too white inside, maybe I will try to make it again with fresh strawberries from a farmer’s market. I’d love to try with some Ponchatoula strawberries! The only other thing I would do differently with this recipe is that I would dust the strawberry chunks with flour so they don’t all settle to one part of the bread. Other than that, this was delicious and definitely a recipe I’ll make again!
Strawberry Bread
Adapted from Cate’s World Kitchen
Ingredients:
2 eggs
1/4 cup plain yogurt
1/4 cup vegetable oil
2 tsp vanilla extract
1 cup all-purpose flour
1/2 cup whole wheat flour
2/3 cup sugar
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1.5 cup diced strawberries
Method:
Preheat oven to 350. Grease a loaf pan with nonstick spray.
In one bowl, mix the dry ingredients together (flours, sugar, baking soda, baking powder and salt). In the bowl of your mixer (or a larger bowl if using a hand-held mixer) mix the wet ingredients (eggs, oil, yogurt, vanilla). Slowly add the dry ingredients to the wet, mix until there are no lumps remaining. Dust the strawberries with a touch of flour, then fold into the batter. Pour into the loaf pan and bake 40 minutes, or until cooked through.
