About five years ago, my mom gave me this recipe for taco soup. I don’t know where she got it from, if it’s actually a weight watcher’s recipe or something someone else thought up and figured out the points for. It doesn’t matter. It’s good stuff! It’s been years since I had it and since I’m trying to lose some weight, I figured I’d dust off the old recipe and try it out on my hubby. He loved it! Of course he ate his with Fritos, but he never seems to gain weight so he can do that. This soup is 2 points for 1 cup, not counting toppings. For toppings, you’ll have to consult your weight watchers point guide or whatever. It’s great though, hearty, tasty, and you don’t feel guilty afterwards!

1 pkg Morning Star Burgers
1 pkg frozen seasoning blend
1 pkg taco seasoning
1 can whole kernel corn, with juice
2 cans kidney beans, with juice
1 can Rotel tomatoes
1 small can tomato sauce
Spray large nonstick pot with cooking spray and heat over medium heat. Add seasoning blend and cook until tender. Add all of the canned items and the taco seasoning, bring to a simmer. Crumble veggie burger patties into the soup and mix in well. Simmer for 20 minutes. Serve with your favorite toppings.
